Turkey and Zucchini Meatballs
These delicious and soft meatballs are a great dish for the whole family. They are freezer and batch cook friendly, making them an easy lunch or dinner. Serve with a side of veggies, garlic bread or a caprese salad (as pictured).

Ingredients
- 250 gm ground turkey breast
- 1/2 large zucchini
- 1 carrot
- 1/4 onion
- 1 egg for an egg free option try applesauce as a substitute
Instructions
- Pre-heat oven to 250°C and line a baking tray with baking paper.
- Grate carrot, zucchini and onion into a bowl. Squeeze out excess water with hands over the sink. Note: This step is essential in making sure that the meatballs set nicely.
- Add the ground turkey and mix through with hands or a spoon ensuring that the vegetables are evenly spread through the mixture.
- Add the egg, mixing with a spoon until well combined.
- Spoon meatballs onto the baking tray ensuring room between each and cook in the oven for 20-30 mins until golden on top.
- Let cool before serving to little ones!
