Curried Egg Sandwiches
This super easy spiced egg salad recipe is fantastic on it's own or in a sandwich. It is a healthy and simple way to ensure a little protein for lunch, and is a simple sandwich to pack on the go.

Ingredients
- 1 Egg
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Garlic powder
- 2 Slices Iron fortified wholemeal bread optional
- 1 tbsp Greek Yoghurt
Instructions
- Boil egg for 10 minutes to ensure that it is hard boiled
- Once the egg is boiled, peel and ensure all shell is removed. Using a fork, crush egg to that it is well combined.
- Add spices and yoghurt, and mix well.
- Serve on sandwich bread or simply by itself. Add some cheese and tomato for a great flavour pairing.
