Apple and Oat Bliss Balls

These easy oatmeal balls are a healthy breakfast or snack for any time of day. This recipe can be altered to incorporate any fruits (berries and stone fruits work particularly well) and can be stored in the fridge for up to 4 days or frozen, so are ideal for meal-prep. Serve with Greek yoghurt and an extra serve of fruit.

Ingredients

  • 2 tsp ground cinnamon
  • 2 tsp ground nutmeg
  • 1 large apple
  • 1 large banana
  • 1 cup quick oats or iron fortified baby oats
  • 1 cup water or milk of choice
  • 1/2 cup desiccated coconut

Instructions

  • Peel and cut apple and banana into small pieces. Heat a small amount of water in the saucepan, bring to a boil and add the fruit and spices and reduce to a simmer and cover.
  • When the fruit is soft, uncover and mash with a potato masher or back of a spoon to form a paste-like consistency.
  • Add oats and water/milk and simmer until oats are soft and no liquid is visible., approx. 10 mins. Add more water if needed if oats are not softened.
  • Remove saucepan to heat and allow to cool until the mixture is easily pliable. Roll into balls and roll in desiccated coconut.
  • To store wrap each ball in cling-wrap and place in an airtight container and keep in the fridge or freezer.
