Chicken Quesadillas
This simple recipe will be a favourite for the whole family. Serve with some extra veggies or use spinach or potato wraps for a little extra nutritional value.

Ingredients
- 2 tbs ground chicken breast
- 1/2 large tomato
- 1/4 onion
- 1/4 cup shredded mozzarella cheese
- 1 tortilla spinach or potato chapattis work very well for this
Instructions
- Finely chop onion and fry in a non-stick fry pan until soft. Add chicken mince, breaking apart into very small pieces and cook on a high heat until browned.
- Finely chop tomato and spread over half of the tortilla. Add the cheese and the onion and chicken mixture.
- Fold the tortilla in half and cook in the fry pan, flipping once or press in a sandwich press. The quesadilla is cooked when the cheese is melted and the tortilla is crispy but not too hard.
- Remove from heat and cut into quarters or appropriate portions, serve with veggies or veggie chips for a bit of fun.
