Ingredients
- 40 gm organic beef mince
- 2 tsp ground cumin
- 2 tsp ground paprika
- 1/4 avocado
- 2 tsp greek pot set yoghurt
- 1 wrap or chapatti (use a potato based or spinach wrap for extra nutritional value, consider the sodium content when choosing a wrap).
- 1/4 onion
Instructions
- Cut the wrap into small rounds using a cookie cutter. Pre-heat oven to 200°
- Spray the underside of a muffin tin and place the small circle wraps between the muffin cups to form taco shells. Put in the oven and bake for 10 mins or until softly set.
- Dice onion. Heat a non-stick skillet and cook onion until soft and fragrant.
- Add the beef mince and brown. Add the paprika and cumin and reduce heat. Splash in a small amount of water and cook on low heat until the beef and sauce is thickened.
- Remove taco shells from the oven and place a small amount of beef taco mix in each shell. Top with yoghurt and a small amount of cheese (optional).
- Serve with tomatoes and leafy greens. Enjoy!
