Chicken and Pumpkin Pasta

- 1 Vegetable steamer
- 1 Large non-stick skillet
Ingredients
- 1/4 Butternut squash or pumpkin
- 1/4 Brown onion
- 4 portions Pasta of choice
- 1 tbs Lemon juice
- 1 tbs Goats cheese
- Finely chopped chives to garnish
- 250 gm Ground chicken breast
Instructions
- Steam pumpkin or squash until soft. Bring pot of water to a boil and cook pasta until al dante.
- Finely chop onion and add to a hot skillet until soft. Add ground chicken and break up into a fine mince, cook until lightly browned.
- Reduce heat and add pumpkin, folding in to the chicken until well combined. Add lemon juice and goats cheese and stir until cheese has melted.
- Turn the heat off and fold in pasta of choice. Add chives for garnish and serve with extra veg or garlic bread.
