Equipment

  • 1 Vegetable steamer
  • 1 Large non-stick skillet

Ingredients

  • 1/4 Butternut squash or pumpkin
  • 1/4 Brown onion
  • 4 portions Pasta of choice
  • 1 tbs Lemon juice
  • 1 tbs Goats cheese
  • Finely chopped chives to garnish
  • 250 gm Ground chicken breast

Instructions

  • Steam pumpkin or squash until soft. Bring pot of water to a boil and cook pasta until al dante.
  • Finely chop onion and add to a hot skillet until soft. Add ground chicken and break up into a fine mince, cook until lightly browned.
  • Reduce heat and add pumpkin, folding in to the chicken until well combined. Add lemon juice and goats cheese and stir until cheese has melted.
  • Turn the heat off and fold in pasta of choice. Add chives for garnish and serve with extra veg or garlic bread.
