This super easy spiced egg salad recipe is fantastic on it's own or in a sandwich. It is a healthy and simple way to ensure a little protein for lunch, and is a simple sandwich to pack on the go.

Iron fortified wholemeal bread

Greek Yoghurt
Instructions
Boil egg for 10 minutes to ensure that it is hard boiled
Once the egg is boiled, peel and ensure all shell is removed. Using a fork, crush egg to that it is well combined.
Add spices and yoghurt, and mix well.
Serve on sandwich bread or simply by itself. Add some cheese and tomato for a great flavour pairing.
