Oat Flour Pikelets

These little baby sized pancakes are the perfect way to start the day. Serve with some fresh fruit, baby "jam" (see our recipe) or baby safe peanut butter (see our recipe). Oat flour is a a nice alternative to white flour and offers more dietary fibre, antioxidants and B vitamins compared to regular flour and has an earthy, tasty flavour. Make a batch of pancake mixture and keep in the fridge for 3-4 days, or freeze pancakes and toast them as a snack or easy breakfast.

Equipment

  • 1 Non-stick skillet

Ingredients

  • 3/4 cup oat flour
  • 1 small egg
  • 1/2 cup milk (plant based or dairy) add more milk if mixture is too thick.
  • 1/2 tbs baking powder (aluminium free)

Instructions

  • Mix together dry ingredients in a mixing bowl.
  • Heat a medium sized, non-stick skillet.
  • Add egg and milk and whisk until no lumps can be seen.
  • Spoon small pikelet sized pancakes onto a hot skillet. Flip once bubbles can be seen evenly over the entire pancake.
  • Wait until pancake is firm in the middle and let cool before serving with a side of fruit, yogurt and/or baby safe peanut butter or jam.
